Yes, fighting certian monster with your cat will unlock new skill(talk to cats, and they will sometimes tell you which). Cats can only use 3 skills at a time.

Personally I wouldn't train all them at once, seems like a bad idea. you would atleast want one that can take a decent amount of hits. plus it woul seem faster and more efficent to train one at a time.

also some skillz are unlocked at certian comrade levels.

as for the temperments, I wouldn't really know, I try to avoid the coward/pacificst type because they don't attack much..but they are good healers( they try to heal more often)

as far as coward and pacifest cats go i got one pacifist with the abilities health flute demon flute and armor flute, they wont attack anything and just run around picking stuff up and using the flutes. and yes just work on putting its def. up and it will be able to take more hits.
